Satay Lettuce Cups


Dinner ready in 10 minutes!

Fry up 1 finely chopped onion until golden brown.  Add mince and brown.  Add 1 jar of satay sauce (choice level of spiciness) and 1 tablespoon of soy sauce.

Serve the mince in lettuce leaves.

Indian Inspired Wraps



This recipe is taken from Jamie Oliver's 30 minute meals. I like the contrast of the crisp salad and slightly spicy meat served in warm naan bread.

Firstly marinate good quality steaks in a good quality Indian paste such as tikka or Jalfrezi and juice from 1/2 lemon and set aside for 30 minutes.

For salad mix together baby spinach, alfalfa sprouts, 1 large carrot peeled into ribbons, tablespoon sesame seeds (toasted). 

Barbecue steaks until it is cooked to your liking.  At the same time place slices of haloumi cheese on the hot plate of the barbecue and cooked until brown on both sides.  Also warm the naan bread.

Slice the steak into thin slices and arrange on a chopping block.  Place the grilled cheese on top of the salad and squeeze lemon juice over the top. 

Serve the dinner allowing everyone to fill their wraps with a little meat, some salad and a nice spoonful of tzaztikki.



Chicken and Avocado Salad with Dreamy Mango



Sometimes I really need to throw together a quick lunch with minimum effort.  This is dreamy sauce makes a barbecued chicken something special and can be whipped up very quickly.

Place avocado, 1 mango sliced and shredded barbecued chicken onto a bed of lettuce.

In a food processor add 1/4 cup of thousand Island dressing, 1/2 cup cream, 2 table spoons mango chutney and 2 tablespoon chopped mint.

Either drizzle dressing over the top of the salad or place in a bowl on the side for every one to serve themselves.
